Being vegetarian for almost thirty years I've enjoyed many grown in our small back garden each Summer. The last of the garden harvest was picked Tuesday - a few eggplants hanging on for dear life, some dangling small green peppers, the remaining Roma tomatoes struggling to survive despite roots devastated by hungry voles! Tossed with extra virgin olive oil, roasted along with an onion, yellow and red peppers and a few garlic cloves and a dusting of that French herbed sea salt, they turned out lovely and the entire house smelt so good.

Mary, I love risotto with veggies. I don't usually eat eggplant, though. I've never been able to get it to not be bitter even if I soak it as suggested. I'll eat it in restaurants but I don't fix it myself. I think I know what we'll be having for dinner tonight, though! Thanks for the lovely, colorful pictures.

ReplyDeleteThough not vegetarian, I find myself leaning toward becoming vegetarian.
My little grandson refuses meat or fish of any kind. I told my daughter, perhaps he's trying to tell her something! He seems to thrive quite well, getting his protein elsewhere.

Although we are not vegetarians, we do love meals with no meat. This all looks absolutely delicious!!! Makes me want to buy a mix of veggies for roasting this weekend. Or just stop by your house for dinner. :)

I checked for you and see that Amazon is now selling the long and shortended versions on DVD in the US only. I would love to have it on DVD before videos are totally out. It is a fun and gentle entertainment which I can highly recommend.

This is my favorite veggie dish - sans the eggplant, which I have never included. I usually go with red and green peppers, slices of those nice slim yellow squash and onions. Yum.

ReplyDeleteMy husband would never allow a meal without meat and I don't think I've had many (at least evening meals).
And I forgot, I would add the garlic too, and I usually toss the veggies with some dry Italian salad dressing mix and salad oil.
Everything looks yummy and yes,it's mostly veggies for us as well. Diane

ReplyDeleteI am not a vegetarian but I can easily eat that way. I went to the local Farmer's market yesterday and bought cetified organic spinach. Today I quickly wilted the spinach in olive oil, fresh garlic, and celtic salt. Oh, I wanted to lick the plate!
